In recognition of record high temperatures we reached today, here’s \u00a0a great recipe to beat the summer heat.\u00a0 They\u2019re even better than I remember fudgesicles being as a kid.\u00a0 This recipe is gluten free, sugar free, dairy free and low on the glycemic index. \u2026it’s also Yummy!<\/p>\n

\"fudgesicle\"<\/a><\/p>\n

Cocoa-Coco Pops<\/p>\n

2 T. cocoa powder, dutch process is richer
\n2 T. agave nectar
\n\u00bd tsp vanilla
\n1 can coconut milk (13.5 oz or so)
\n\u00bc cup shredded unsweetened coconut<\/p>\n

In a small bowl mix together \u00bc cup coconut milk, cocoa, agave nectar and vanilla.\u00a0 It will make a thin paste.<\/p>\n

In a saucepan heat remaining coconut milk to a boil.\u00a0 Remove from heat and whisk in cocoa mixture.\u00a0 Let cool for 15 minutes. \u00a0Divide coconut among popsicle molds. \u00a0Pour cocoa mixture into popsicle molds. Freeze for 3-6 hours.\u00a0 Overnight will give you pops that don\u2019t melt as quickly.<\/p>\n

Depending on the size of your mold, this makes 4 \u2013 6 popsicles. Be sure to use a napkin!<\/p>\n","protected":false},"excerpt":{"rendered":"
