{"id":3098,"date":"2012-01-03T15:52:52","date_gmt":"2012-01-03T20:52:52","guid":{"rendered":"http:\/\/keepsakecrafts.net\/blog\/?p=3098"},"modified":"2012-01-03T15:52:52","modified_gmt":"2012-01-03T20:52:52","slug":"a-healthy-and-utterly-delicious-recipe-for-the-new-year","status":"publish","type":"post","link":"https:\/\/keepsakecrafts.net\/blog\/2012\/01\/03\/a-healthy-and-utterly-delicious-recipe-for-the-new-year\/","title":{"rendered":"A Healthy (and Utterly Delicious) Recipe For the New Year"},"content":{"rendered":"<p>This isn&#8217;t a cooking blog, so I don&#8217;t post recipes very often, but I figure that around the holidays baking is part of our craftiness and creativity. \u00a0Right? \u00a0\ud83d\ude42<\/p>\n<p>If you&#8217;re like me, you&#8217;ve eaten far more of this kind of stuff than is good for you.<\/p>\n<p><a href=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/2011-12-29-christmas-baking-006.jpg\"><img decoding=\"async\" class=\"ngg-singlepic ngg-none\" src=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/2011-12-29-christmas-baking-006.jpg\" alt=\"2011-12-29-christmas-baking-006\" width=\"450\" \/><\/a><\/p>\n<p>But it was oh so good, indeed.<\/p>\n<p>Here&#8217;s \u00a0how my table looked, with all the goodies ready to deliver to the neighbors. So festive.<\/p>\n<p><a href=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/2011-12-29-christmas-baking-009.jpg\"><img decoding=\"async\" class=\"ngg-singlepic ngg-none\" src=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/2011-12-29-christmas-baking-009.jpg\" alt=\"2011-12-29-christmas-baking-009\" width=\"450\" \/><\/a><\/p>\n<p>Here&#8217;s my helper, Miss Molly. Well, she wasn&#8217;t really a helper &#8211; more like a supervisor.<\/p>\n<p><a href=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/2011-12-29-christmas-baking-002.jpg\"><img decoding=\"async\" class=\"ngg-singlepic ngg-none\" src=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/2011-12-29-christmas-baking-002.jpg\" alt=\"2011-12-29-christmas-baking-002\" width=\"450\" \/><\/a><\/p>\n<p>And here is the promised healthy recipe: \u00a0Kale Chips.<\/p>\n<p><a href=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/kale-chips-003.jpg\"><img decoding=\"async\" src=\"https:\/\/keepsakecrafts.net\/blog\/wp-content\/gallery\/woyww\/kale-chips-003.jpg\" alt=\"kale-chips-recipe\" width=\"450\" \/><\/a><\/p>\n<p>What?! \u00a0You don&#8217;t think they look yummy?<\/p>\n<p>Yeah, I was skeptical the first time someone gave me some to try.<\/p>\n<p>Listen,\u00a0I kid you not, this recipe has to be tried to be believed,\u00a0<em>these kale chips are amazing. \u00a0<\/em><\/p>\n<p><em><\/em>I am in no way a veggie gal, and the sight of a pile of dark leafy greens \u00a0generally sends me running, but\u00a0I could eat these <em>all day<\/em> long. They&#8217;re better than potato chips, and I feel so virtuous and healthy munching my way through the lot.<\/p>\n<p>So, give &#8217;em a try. \u00a0I dare ya. \ud83d\ude09<\/p>\n<p><span style=\"text-decoration: underline;\">Kale Chips<\/span><\/p>\n<p>1 large bunch kale (1.5 &#8211; 2 lbs)<br \/>\n1\/2 cup almond butter<br \/>\n1\/2 cup nutritional yeast (found at health food stores)<br \/>\n1\/2 cup olive oil<br \/>\n3 tablespoons lemon juice<br \/>\n2 teaspoons salt<\/p>\n<p>Wash and dry kale and remove thick stems. Tear into large pieces. (I like each large leaf to be torn into about 5-6 pieces. Don&#8217;t stress over this.)<\/p>\n<p>In a large bowl whisk together remaining five ingredients. Add in kale. Use your hands to thoroughly coat and massage mixture into leaves.<\/p>\n<p>Now you can either dehydrate the kale, or bake in an oven. I like dehydrating because since the kale isn&#8217;t cooked\u00a0the nutrients are preserved.<\/p>\n<p><span style=\"text-decoration: underline;\">Dehydrator method<\/span><\/p>\n<p>Divide mixture between four trays of a dehydrator, if you have screens, use them.
